There are now a ton of great restaurants in Las Vegas. 

Unfortunately: 1) I don't get there often enough  2) I don't stay long enough  3) I drink so much that I barely remember eating!

So, I only have a few recommendations so far (hopefully there will be more to come!):

bulletJaleo: Jose Andres' Vegas outpost of his killer DC tapas joint; best empanadas I've ever had ($$$)
bulletChina Poblano: not a fusion kind of place...wish it were; Chinese and Mexican on the menu; loved the 27 vegetable fried rice and THE BEST MARGARITA I'VE EVER HAD ($$)
bullet Carnevino:  Mario grabs a Royal Flush; this place is insane.  They buy their own cattle, raise it, feed it, butcher it, dry age it, and cook it to perfection; a must when in LV. ($$$$)
bulletStripSteak:  Mina has created a great, fun place to indulge in killer steaks and sides and fries on that night when you are just too hungover to rage ($$$$)
bulletCraftsteak: The LV outpost  kicks ass! The menu is great (try the lamb shank); the atmosphere is perfect; and the service is absolutely unbeatable.  The only reason to go to the MGM Grand...and a must stop with every Vegas visit; bring a large group and get a private room ($$$$)  (P.S. I could review more Vegas restaurants, but I keep coming back here!)
bulletAqua:  I hate to say it, but I was more impressed with the Bellaggio's version of the restaurant that with the original SF spot I used to love; the tuna tartare is the signature dish, but don't forget the seared scallops with foie gras! ($$$$)
