The attributes of a good burger are pretty consistent.  The same holds true for steak, fries, sushi, etc.  A salad, however, is quite a different story.  A salad comes in all shapes and sizes.  Here are my favorites in NYC:

 

  1. Warm Lamb's Tongue Salad (greens, chanterelles, oven dried tomatoes, poached egg, pecorino), Babbo

  2. Pontormo (scrambled egg, greens, pancetta served warm), Beppe

  3. Tuna Sashimi Salad, Nobu

  4. Cobb Salad, Mesa Grill (served at brunch)

  5. BBQ Chicken Chopped Salad (hold the jicama), California Pizza Kitchen

I must pay my respect to the Warm Brussels Sprout Salad that was served seasonally at Gordon's House of Fine Eats in San Francisco.  It cleverly used Brussels Sprouts instead of lettuce and adds lardons, egg, caramelized onions, and croutons in a garlic-shallot vinaigrette.

Also, I must apologize for adding the CPK salad.  For those brave enough to enter the establishment, you will notice that it quite resembles heroin (I think).  Anyway, I am certain that the quality is deteriorating by the minute, so it might not be on the list for long.
