Step up to the plate.  Balls to the wall.  Pedal to the metal.  No regrets.  Take it to the max.  Sometimes you need a night where you simply go all out.  Forget the cost.  Forget your health.  Forget all conventional eating practices.  Fill your gut with the raw stuff, the red meat, the innards, the offals, and the organs.  Enjoy the look on the tourist's face as she strolls past your table in horror.  Take no prisoners.

Where do I go when I really need to let it rip?

  1. Babbo (where no part of the animal is wasted)
  2. Craft (where the tables are big enough to hold 5 plates per person)
  3. Peter Luger's (where others are putting you to shame!)
  4. Eleven Madison (where they can't find another way to serve foie gras)
  5. Nobu (where your Omakase tab can top Japan's GNP)

There are some other great places that didn't quite make the list, but they can offer a pretty solid environment as well:  Sushi Yasuda (Omakase), Joe's Shanghai (dumplings, shoulders and stews), and maybe even Katz's (corned beef and pastrami).
