In Las Vegas, you should choose your hotel based on two things:

bulletThe bars
bulletThe pool

Therefore, there are only a few places to stay:

bulletHard Rock Hotel and Casino: small rooms, but a great pool, some decent restaurants, and a raging, raging bar...that never stops raging.
bulletMandalay Bay: A younger crowd with some fun night spots (Red Square, Rum Jungle) and a great pool.
bulletThe Palms: the new hip spot; great pool; a bar with great views (Ghost Bar); and a cool club (Rain).

If you want a nice room to get away from all the partying:

bulletBellagio: great lobby, the best restaurants, and, of course, the fountain show.

After-thoughts:

bulletCaesar's Palace:  great pool and great shopping
bulletFour Seasons:  the least Vegas of all the hotels
bulletParis:  Not bad
bulletVenitian:  my favorite casino; now with the Canyon Ranch Spa!

Avoid all others.
