The best restaurants I have been to:

bulletFandango: excellent Latin American menu (fish tacos!); awesome preparation; cool sous chef (Stephanie); near-perfect service ($$$)
bulletWild Ginger: amazing Pan-Asian; order half-entrees to try more ($$$)
bullet727 Pine: wondeful inventive northwestern food; great bartenders ($$$$)
bulletShiros: I think I have the name right; best sushi; no atmosphere ($$$)
bulletThe Metropolitan Grill: Seattle's #1 steak house ($$$$)
bulletBrasa: great food and a fantastic wine list ($$$$)
bulletEl Gaucho: the scene is lively, the room is cool, and the steak is good ($$$)
bulletFlying Fish: excellent preparation of fresh, fresh fish (pray for steelhead!) ($$$)
bulletKingfish: cool little neighborhood Southern ($$$)
bulletI Love Sushi: great strip mall sushi joint in Bellvue (also downtown) ($$$)

Disappointing:

bulletEarth & Ocean: the W Hotel's lame attempt at a cool restaurant ($$$)
bulletBlowfish: a Pan-Asian that tries way too hard ($$$) (closed!)
bulletSazerac: Cool bar, but very average food ($$$)
