My current favorites:

bulletLou Malnati's: Sausage deep dish pizza is the best in the country ($)
bulletHot Diggity Dog:  the best dog in the Windy City, total dive ($)
bulletBlackbird: hands down the best restaurant (for food) in Chicago; great wine list too! ($$$)
bulletOne Sixtyblue: wonderful food in a cool atmosphere ($$$$)
bulletCafe Absinthe: great bistro-style food with a super-cool bar ($$$)
bulletThe Weiner Circle:  the rudest dog in town...not for the timid! ($)
bulletLe Francais: Hard-core French in Wheeling, IL...rich but wonderful ($$$$) {This may have closed}
bulletGibson's (downtown): the best steak in the city that made it famous ($$$$)

From what I hear, you have to try:

bulletTru:  very expensive and very, very good ($$$$)
bulletCharlie Trotter's: very expensive, very good..a classic ($$$$)

Avoid:

bulletGibson's (at O'Hare): While the downtown original is good, the sibling at the airport sucks! (but it may be better than anything else out there!)
bulletPizzeria Due: Classic Chicago deep dish...without any concern for quality!
